Endive Spears Filled with Creamy Blue and Caviar

Makes 8 servings
2 shallots, peeled
2 green onions, trimmed
4 ounces cream cheese
4 ounces Saga® Crumbled Gorgonzola
1 item Saga® Blue
2 lemon juice
½ cup sour cream
5 endive heads
2 ounces golden caviar chives for garnish
Combine the shallots and green onions in the food processor and pulse until minced. Add the cream cheese, Blue cheese, and sour cream. Pulse to blend and then set aside. Peel the leaves off the heads of endive. Spoon a tablespoon of cream cheese mixture onto each of the leaves. Spoon a half of teaspoon of caviar next to the cheese mixture and serve immediately.
