Ingredients

Dressing

¼ cup chopped chives

3 tablespoons olive oil or walnut oil

2 tablespoons fresh lemon juice

Coarse salt & pepper

½ pound small new potatoes, quartered

8 ounces French green beans, trimmed

1 cup grape tomatoes, halved

12 ounces grilled tuna or canned tuna

¼ cup crisp-cooked bacon pieces

4 ounces Saga® Crumbled Blue

12 nicoise olives

Methods

Prepare dressing by whisking together the chives, oil and lemon juice. Season with salt and pepper; set aside.

In covered saucepans, cook the potatoes and French green beans until tender. The potatoes will take about 12-15 minutes and the beans about 4 minutes. Drain, set aside and keep warm. Arrange the beans and arugula on the bottom of the serving plates. Toss potatoes, tomatoes, tuna and bacon with the dressing. Spoon over arugula and beans, then sprinkle with blue cheese and olives. Serve immediately.
